Due to its small size and 12 months of aging (lengthy for such a small cheese), Cheddar Dorset Drum delivers a fanfare of complex flavors ranging from sweet and tangy to sharp.
It is produced in Dorset, one of the designated Cheddar counties of southwestern England, and the milk all comes from the farm‘s own herds.
Once ripe, it is hand-dipped in a black wax and packaged in a hexagonal box with a picture of a drummer boy on the front. Slightly less than a pound in weight, Dorset Drum makes an excellent gift and sits neatly in a holiday basket. Made in England.
