Handmade traditional Wensleydale cheese is made from milk drawn from cows grazing the sweet limestone pastures on surrounding farms in Upper Wensleydale. It's a fresh, young cheese taken at only three weeks old. It has the unique clean, mild, slightly sweet flavor with a honeyed aftertaste for which it is renowned.
We love pairing this with a crisp apple or a thin slice of fruit cake.
INGREDIENTS: Pasteurized Cow's Milk, Salt, Rennet, Starter Cultures, Lemon Curd, Granulated White Sugar, Honey.

I was visiting friends in Austin, Texas and found this at the local Central Market. Very nice, subtle, soft cheese. Enhanced with whatever flavor cracker you serve with. I hope I can find it in the Pittsburgh area. If not, I will be ordering online.
