Pink salmon (Oncorhynchus gorbuscha) roe is the most common seafood delicacy. The taste is universal, ikura has a pleasant smell and color from orange (frozen) to bright orange (after thawing). The eggs size reaches 5 mm in diameter. The eggs can burst and form juice, as the shell is not particularly strong.

Facilities of Peter Pan Seafoods Co. are located in Alaska directly on the shore, so the period from fishing to processing does not exceed 12-15 hours. Each stage of production is strictly regulated and worked out to the smallest detail, which allows to obtain caviar of the highest quality. Whole pink salmon goes to the plant and is kept in cold water tanks prior to processing. Salmon eggs is removed from the fish, washed, salted. After passing the main stages of production, an independent expert from Japan grades all produced roe, dividing it into grades: 1, 2 and 3. After that, it is packed and frozen in high-power freezers at a temperature of -40°C. Instant freezing allows to preserve all the useful qualities of caviar.
